Why do 3rd-party camera apps work poorly on my Pixel 2 XL?

I've had my Pixel 2 XL for a little over a year now. I like(d) to use it for photography sometimes, and since the stock camera doesn't let you change settings manually(other than applying filters) I downloaded a recommended manual camera app(Camera FV-5).
